Double-Crust Pastry

My wife makes the best pies. There’s no use arguing. If you think you or someone you know can make a better pie than my wife, I will happily invite you over to our home so you can try one of my wife’s pies. I’m sure she won’t mind.

My wife has this recipe for Double-Crust Pastry memorized like the Pledge of Allegiance.

Double-Crust Pastry

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • ⅔ cup plus 2 tablespoons shortening
  • 4 to 5 tablespoons ice water


Combine flour and salt; cut in shortening with a pastry blender until mixture is crumbly. Sprinkle ice water, 1 tablespoon at a time, evenly over surface; stir with a fork until dry ingredients are moistened. Shape into a ball; chill until ready to use. Roll and fit pastry into pieplate as pie recipe directs.

  1. Oh, yummy. I love homemade pie crust. I think I need that cookbook, too. My mom has a few of the Southern Living ones and flipping through them always makes me drool. (but a quick glance at my thighs snaps me out of it. sometimes.)

    I wish you could send a pie through the mail…
